Description
Domaine Henri Germain Les Fairendes is a Chassagne-Montrachet premier cru from the upper, white-soiled sector of Morgeot.
Morgeot is the largest premier cru in Chassagne and can be bottled under some 20 separate lieux-dits, so the name alone tells you little. The finest parts lie in the upper sector, above the main road, on the poorer white soils, and Les Fairendes is one of them, sitting just below Les Caillerets. Growers in the village rate it highly: Thierry Pillot, who has no holding there, reports that his grandfather considered it the best terroir within Morgeot. Germain's wine is accordingly not a typical Morgeot. It is deep and layered but stays vital and citrus-fresh, gliding across the palate before an intense finish with gentle grip. As across the cellar, élevage is unhurried and the oak used sparingly.
Drink from three years and hold for a decade. Serve at 10-12°C with roast chicken, lobster or a rich fish pie.
