Domaine Henri Germain Chassagne-Montrachet 1er Cru Morgeot Les Fairendes comes from the upper, whiter-soiled sector of Morgeot rather than the richer ground below the road.

Morgeot is the largest of Chassagne's premier crus, an umbrella under which some twenty separate lieux-dits may be bottled, and its character varies sharply with position. The finest parcels lie in the upper sector above the main road, on poorer, paler soils, and Les Fairendes is one of them, sitting just below Les Caillerets. Growers in the village have long rated it highly: Thierry Pillot, who has no holding there, recalls his grandfather calling it the finest terroir within Morgeot. Domaine Henri Germain works the site in the same manner as its Meursault holdings, with whole-bunch pressing, natural fermentation and a patient élevage in barrel with little new wood. The wine that results is far from the broad, fleshy Morgeot template, running chalky, driven and long instead.

Give it three to five years and expect it to hold for a decade. Serve at 10-12°C with grilled snapper, roast pork loin or a gruyère tart.
