Les Tremblots is a village climat on the Puligny-Montrachet side of the boundary with Saint-Aubin, where Hubert Lamy has long held vines. Olivier Lamy replanted part of it at haute densité, up to 30,000 vines per hectare against a usual 10,000, so that the roots compete and each vine carries only a small crop. Picking is early by local habit, the fruit is whole-bunch pressed, and the wine is raised in barrel and larger wood with restrained new oak, in the tight and precise style that has made the domaine one of the most sought-after in the Côte de Beaune. The magnum format slows the whole process down again.

This will reward a decade or more in magnum; serve with roast poultry, scallops or gruyère at 10-12°C.
