Domaine Jaeger Defaix Rully 1er Cru Clos du Chapître Rouge 1.5L MAGNUM 2023

Clos du Chapître is a one-hectare walled monopole inside the Rully 1er Cru Chapître, bottled here in magnum.

Rully lies at the northern end of the Côte Chalonnaise, a district that has quietly closed much of the gap on the Côte d'Or. The clos sits directly behind the family house and cellars, enclosed by a two-metre stone wall, and belongs solely to the Jaeger-Defaix family. Yields are held down by severe pruning, disbudding and a green harvest, and the bunches are sorted by hand so that only the best clusters go into the vat. The wine spent twelve months in oak barrels, of which ten per cent were new, then settled in tank before bottling. Jancis Robinson has written that wines from this site show the Côte Chalonnaise can field bottles of serious interest to drinkers raised on the Côte d'Or; the clos reliably delivers more depth, structure and complexity than the village Rully.

The magnum format favours slow development, so give it three to eight years; serve at 16–18°C with roast duck, mushroom risotto or hard cheese.
