Description
The Clos du Chapître is a walled monopole of Jaeger-Defaix, lying inside the Rully premier cru Chapître.
Rully sits at the northern end of the Côte Chalonnaise, where limestone slopes give reds that are lighter framed than those of the Côte de Beaune but no less precise. This one-hectare plot lies directly behind the family house and cellars and is enclosed by a two-metre stone wall, which the domaine holds outright. Yields are kept down by severe pruning, de-budding and a green harvest, and the bunches are then sorted by hand so that only the best clusters go into the vat. This vintage was made with twenty per cent whole bunches, and the wine spent fifteen months in oak barrels, half of them new, before bottling.
Drinking well from release and worth five to eight years in the cellar; serve at 16-18°C with roast duck, coq au vin or a plate of charcuterie.
