Domaine Jaeger-Defaix Rully Rouge is the estate's newest red, made from a single organically farmed parcel of Pinot Noir in the Vorot lieu-dit.
Rully sits at the northern end of the Côte Chalonnaise, better known for its whites but capable of finely drawn Pinot Noir from its limestone slopes. Jaeger-Defaix, run by Hélène Jaeger-Defaix with the family also behind Domaine Bernard Defaix in Chablis, bought this small parcel of Rully villages in 2011. The 30-year-old vines in Vorot have been farmed organically for decades and the site yields small, thick-skinned bunches with concentrated juice. In this vintage the fruit was almost entirely destemmed to avoid green tannin, and extraction was kept to an average level because the balance of juice to skins was already classical. The wine was aged for 15 months in seasoned oak barrels of one to three years, and is sealed under Diam.
Ready after a year or two and good for six or seven; serve at 16°C with roast chicken, charcuterie or soft washed-rind cheese.
