Domaine Jean Defaix Chablis 1.5L MAGNUM 2023

Domaine Jean Defaix Chablis is Chardonnay from the northernmost outpost of Burgundy, where the vineyards sit on an ancient seabed.

Chablis lies well north of the Côte d'Or, closer to Champagne than to Beaune, in the valley of the Serein. What sets it apart is the Kimmeridgian marl beneath the vines, a limestone and clay laid down in a shallow sea some 150 million years ago and packed with the fossilised oyster shells that growers point to as the source of the region's character. The climate is cool and frost is a perennial hazard, which is why so much of the region is fitted with sprinklers and burners. Village Chablis draws on vineyards across the appellation, on both banks of the river, and is usually fermented and raised in stainless steel so that nothing comes between the grape and the ground it grew on.

Serve well chilled with oysters, other raw shellfish or goat's cheese.
