Domaine Jean Defaix Chablis 1er 'Les Vaillons' 2023

Domaine Jean Defaix Chablis 1er 'Les Vaillons' comes from one of the largest and best known premier cru vineyards on the left bank of the Serein.

Chablis divides neatly along the river. The seven grands crus occupy a single slope on the right bank above the town, while the premiers crus are spread on both sides. Les Vaillons sits on the left bank, facing back across the valley, and is one of the largest of them, taking in a number of smaller named climats within its boundary. The soil throughout is Kimmeridgian marl, a fossil rich limestone and clay from a shallow Jurassic sea, and the northerly climate keeps ripening slow. Premier cru fruit is generally given longer on lees than village wine, sometimes with a portion in older barrels.

Serve at around 10 degrees with shellfish, white fish or roast chicken, and give it three to six years in the cellar.
