Description
Domaine Jean Defaix Fourchaume 1er Cru is a Chablis premier cru from the right bank of the Serein, on the same hillside that carries the grands crus.
Fourchaume runs north from the grand cru slope towards the village of La Chapelle-Vaupelteigne, sharing the same aspect and the same Kimmeridgian marl, a limestone and clay full of fossilised oyster shells laid down in a Jurassic sea. That position has long made it the most highly regarded of the Chablis premiers crus and the one most often described as approaching grand cru in scale. Several smaller climats, among them Vaupulent, Côte de Fontenay and L'Homme Mort, may be sold under the Fourchaume name. Chablis at this level is typically given extended lees ageing before bottling, and some growers use a proportion of older barrels alongside steel.
Serve at around 10 to 11 degrees with lobster, scallops or fish in a butter sauce; it will reward five to ten years in the cellar.
