Domaine Jean-Louis Chave Selection Crozes-Hermitage Blanc Sybèle is a Marsanne and Roussanne white from the largest appellation of the northern Rhône.
Crozes-Hermitage wraps around the Hermitage hill and spreads north and south across eleven communes near Tain, covering far more ground than its famous neighbour. White Crozes accounts for only a small share of production and is made from Marsanne, usually the senior partner, with Roussanne in support. J.L. Chave Selection is the négociant house run from Mauves by Jean-Louis Chave alongside the family domaine on the Hermitage hill, buying fruit and wine from growers he knows well and raising it in his own cellars. The whole range is built around the table rather than around show, and the whites are handled with restraint. Much of the white acreage lies on the southern terraces, where the deep stony soils drain freely.
Best served lightly chilled, at around 10 to 12 degrees, with roast chicken, river fish or a soft washed-rind cheese.
