Domaine Jean-Marc Bouley Bourgogne Aligoté is a white Burgundy made from the region's other white grape by a family long established in Volnay.
Aligoté has been grown in Burgundy for centuries and was once planted alongside Chardonnay all down the Côte, before being pushed onto higher, cooler and stonier ground as Chardonnay claimed the best slopes. It has its own regional appellation, Bourgogne Aligoté, which covers the whole of the region, and the variety has been taken far more seriously in recent years as growers give it older vines and better sites. The Bouley family is based in Volnay in the Côte de Beaune, where Thomas Bouley now makes the wines with his father Jean-Marc. Aligoté is generally raised with a light hand to keep its natural freshness intact.
It is at its best well chilled, as an aperitif or alongside oysters, charcuterie or a plate of gougières. It is also the traditional base of a kir.
