Domaine Jean-Marc et Thomas Bouley Meursault is a white Burgundy from the largest and best known of the white wine villages of the Côte de Beaune.
Meursault lies between Volnay and Puligny-Montrachet and is planted almost entirely to Chardonnay. It holds no grand cru, an accident of the 1930s classifications rather than a judgement of quality, but its premiers crus on the Puligny side, Perrières, Genevrières and Charmes, are among the most sought-after whites in France. Deep limestone marls give the village wines their body, and the traditional handling is a whole-bunch pressing, fermentation in barrel and a long rest on lees. The Bouley domaine is based next door in Volnay, where Thomas Bouley makes the wines with his father Jean-Marc. The village name is often said to come from muris saltus, the leap of the mouse, a reference to the narrow gap in the slope between Meursault and Puligny.
Best served at around 12 degrees with lobster, scallops, poultry in a cream sauce or a mature hard cheese.
