Domaine Jean-Marc et Thomas Bouley Volnay Clos de la Cave is a red Burgundy from a named walled parcel within the village appellation of Volnay.
Volnay sits between Pommard and Meursault on the Côte de Beaune and produces red wine only, from Pinot Noir. The commune has no grand cru, but its village vineyards run right up to the houses, and a number of the older parcels are enclosed by stone walls, a legacy of the days when a clos marked out a holding worth protecting. Limestone underlies the slope, thinner and stonier as it rises. The Bouley family has farmed in Volnay for generations, and Thomas Bouley now makes the wines with his father Jean-Marc, drawing on parcels across the village and neighbouring Pommard. Village Volnay is typically drawn from parcels at either end of the slope, above and below the band of premiers crus.
It suits roast poultry, duck or mushroom dishes and is best served a little below room temperature.
