Description
Domaine Lamy-Pillot Chassagne-Montrachet Blanc is village-level white Burgundy from the commune that lends half its name to Le Montrachet itself.
Chassagne-Montrachet sits at the southern end of the Cote de Beaune, and in 1879 it added the name of its greatest vineyard to its own, as its neighbour Puligny did in the same period. The two villages share the Montrachet slope between them. Village vineyards here lie on limestone and marl below and around the premier crus, and Chardonnay has progressively replaced Pinot Noir on the better sites since the middle of the twentieth century. The making is traditional: whole-bunch pressing, fermentation and ageing in oak barrels, and a period on lees before bottling. The domaine takes its name from the union of two families long established in the village.
Serve at 12 to 13C with roast poultry, scallops, veal or soft cheeses; a couple of years in bottle does it no harm.
