Description
Domaine Lamy-Pillot Chassagne-Montrachet Pot Bois Blanc is a white Burgundy from a single named parcel in the village that shares the Montrachet name.
Chassagne-Montrachet took the name of its greatest vineyard as its own in 1879, and the commune's slopes run from the Puligny boundary in the north down towards Santenay. Alongside its premier crus there is a patchwork of village-level lieux-dits, and bottling one of them separately, as here with Pot Bois, is a way of showing what a particular patch of limestone and marl does with Chardonnay. The village grew a great deal of Pinot Noir until the middle of the twentieth century, when white steadily took over the better ground. The wine is pressed as whole bunches, fermented and matured in oak barrels, and rested on lees before bottling.
Serve at 12 to 13C with white fish, roast chicken, veal or a plate of hard cheese, and give it a short time in the glass.
