Domaine Lamy-Pillot Saint-Aubin 1er Cru Le Charmois Blanc comes from a premier cru that sits on the same hillside as Chassagne-Montrachet, just around the corner.

Saint-Aubin lies in a side valley behind the great slope of Chassagne and Puligny, tucked off the main road, and for most of its history it was overlooked for exactly that reason. Since the 1990s it has become one of the most sought-after sources of white Burgundy, on the strength of steep, stony limestone slopes and prices that never quite caught up with its neighbours. Le Charmois is among its best known premier crus, lying on the Chassagne side of the hill and directly adjoining that commune's vineyards. Chardonnay here is whole-bunch pressed, fermented and aged in oak barrels, and left on lees before bottling.

Serve at 12 to 13C with oysters, grilled white fish, chicken or goat's cheese; it drinks well from release and keeps for several years.
