Description
Domaine Moreau-Naudet Chablis, in magnum, is a village wine drawn from around 30 parcels and given 20 months on lees, far longer than is usual at this level.
The bulk of the fruit comes from 20- to 30-year-old vineyards at Préhy and Courgis, both south of Chablis, with further parcels in Chablis itself and at Chichée beneath the premier cru vines of Vaugiraut and Vosgros. Spread across the appellation, those parcels cover a range of soil structures and exposures. Fruit from the youngest vines is sold off in bulk, which lifts the standard of what remains. The grapes were pressed gently over about four hours and fermented with indigenous yeasts, still a rarity in Chablis, then raised mainly in tank with an unhurried maturation and 20 months on lees. Hand-harvesting, low yields and the long lees ageing account for the mouthcoating texture and salty depth. The wine is sealed under Diam.
Ready on release and good for five years or so, longer in magnum. Serve at 10-12°C with oysters, grilled prawns or a plate of charcuterie.
