Description
Les Beauregards is the coolest and most south-westerly of the Chablis Premiers Crus, and Moreau-Naudet raises its wine in steel alone.
Chablis lies well north of the rest of Burgundy, on Kimmeridgian limestone and marl that give its Chardonnay a distinct cut. Beauregard sits at the end of the Left Bank, one of the steepest and highest of the Premiers Crus at up to 300 metres, where the clay topsoil is shallow and the limestone marl close to the surface. The parcel has long been in the family but was replanted in 2001 with mass-selection cuttings from Stéphane Moreau's most treasured vines; at twenty years of age Virginie Moreau judged them ready to join the domaine's lineup. High on the hill, the vines catch only the coolest sun and are among the last in the village to be picked. Fermentation is followed by ageing in stainless steel, with no oak at any stage.
Drink from now to about eight years; serve at 10–12°C with oysters, grilled fish or fresh goat's cheese.
