Montée de Tonnerre is the premier cru that sits immediately alongside the Chablis grands crus, separated from Blanchot only by a small valley.
The site lies on the right bank of the Serein on Kimmeridgian marl, the fossil-rich limestone that gives Chablis its saline cut, and its south-westerly exposure makes it one of the riper premiers crus in the appellation. Domaine Moreau-Naudet dates from 1950 and the marriage of Marie Naudet and René Moreau. Stéphane Moreau took over from his father Roger in 1993 and grew it to more than twenty hectares; after his death in 2016 his widow Virginie has carried on with the cellar team, holding to the approach he set. The vineyards are farmed organically and ploughed several times a year, yields are kept low and picking is by hand and late, and the wines ferment with indigenous yeasts and sit a long time on their lees. The premiers crus are given eighteen to twenty-two months on lees, with about thirty per cent of the wine raised in barrel - steamed rather than toasted, and rarely new - so the oak works on texture rather than flavour.
Best given two or three years and good for a decade. Serve at 10-12°C with oysters, grilled fish or a fresh goat's cheese.
