Description
Domaine Moreau-Naudet Chablis 1er Cru Vaillons, in magnum, is blended from three lieux-dits, including 75-year-old vines in Sécher.
Vaillons sits mid-slope on the left bank of the Serein, a well-positioned premier cru whose reputation has been built by a handful of committed growers. Moreau-Naudet works vines planted in 1974 in Les Epinottes, a cooler part of the vineyard, and in Roncières, which brings more flesh, while a parcel of 75-year-old vines in Sécher usually accounts for about 30% of the blend and provides mineral cut and structure. Each parcel is vinified separately before assemblage, and the wine ferments and ages in both tank and older barrels, so oak plays a supporting role only. The domaine hand-harvests, uses natural yeasts and matures its wines unhurriedly. Sealed under Diam, this is a dense and deep but energetic reading of the site.
Give it two or three years and drink over the following decade in magnum; serve with roast chicken, turbot or Comté at 10-12°C.
