Description
Domaine Moreau-Naudet Chablis is a village wine drawn from some 30 parcels across the appellation and given 20 months on lees, considerably longer than most Chablis at this level.
Chablis sits well to the north of the rest of Burgundy, on Kimmeridgian marl, and produces the leanest and most mineral form of French Chardonnay. Moreau-Naudet’s village bottling comes chiefly from 20- to 30-year-old vineyards at Préhy and Courgis, south of Chablis, with further parcels in Chablis itself and at Chichée, beneath the premier cru vines of Vaugiraut and Vosgros. The domaine works around 30 parcels in total, covering a range of soil structures and exposures, and the fruit from its youngest vines is sold off in bulk, which lifts the general standard of what remains. Pressing is gentle and runs over four hours, and fermentation is with natural yeasts, still a rarity in Chablis. The wine is raised mainly in tank and matures unhurriedly. It is sealed under Diam.
Drinking now and worth three to five years. Serve at 10-12°C with oysters, grilled snapper or a fresh goat’s cheese.
