Domaine Moreau-Naudet Chablis 2023

Domaine Moreau-Naudet Chablis is a village wine assembled from around 30 parcels and given 20 months on lees, considerably longer than is usual at this level.

Chablis sits well north of the rest of Burgundy, on Kimmeridgian limestone laid down in a shallow sea, and its Chardonnay is built on acidity and salinity rather than weight. Moreau-Naudet’s village bottling comes chiefly from 20- to 30-year-old vines at Préhy and Courgis, south of the town, with further parcels in Chablis itself and at Chichée, below the Premier Cru vines of Vaugiraut and Vosgros. Across the appellation the domaine works some 30 parcels covering a range of soil structures and exposures, and all the fruit from its youngest vines is sold off in bulk rather than blended in, which lifts the general standard. Pressing is gentle, over four hours, and fermentation runs on natural yeasts, still a rarity in Chablis. The wine is raised mainly in tank and the maturation is unhurried. It is sealed with Diam.

Drinking now and over the next five years. Serve at 10-12°C with oysters, grilled flathead or a goat’s cheese salad.
