Domaine Moreau-Naudet Chablis Les Pargues Vieilles Vignes is a village-level Chablis from a lieu-dit that locals maintain was short-changed when the appellation boundaries were drawn.
Les Pargues occupies a ridge between the Montmains and Vosgros premiers crus and has effectively the same exposure as Vaillons and Montmains, which is a considerable asset in a region this far north. Local accounts hold that the site carried premier cru status before the AOC existed, was abandoned during the war when there was nobody to work it, and never regained its rank once the classification was formalised. The position and the thin, stony soils certainly produce an intensely mineral wine. Moreau-Naudet farms 1.8 hectares here, next to Domaine Servin, from vines averaging over sixty years with yields of only 15-25 hl/ha. Around 30 per cent of the wine goes into barrel, the balance into tank, giving a layered and succulent texture over a rocky, energetic core and a long, briny close.
Ready now and worth four to six years in the cellar. Serve at 10-12°C with oysters, grilled whiting or a bowl of mussels.
