Description
This is Domaine Paul Pillot's Aligoté, the Côte d'Or's second white variety, grown on the estate's land around Chassagne-Montrachet.
Aligoté was once planted widely across Burgundy and was pushed to the margins as Chardonnay took the better slopes; growers have come back to it for its natural acidity and its refusal to turn heavy in warm seasons. Domaine Paul Pillot has been in Chassagne-Montrachet since the mid-nineteenth century, and Thierry Pillot has run it since 2007 alongside his sister Chrystelle, farming around thirteen hectares organically without certification. Since 2011 the house style has been a longer, cooler élevage with much less new wood, and the same restraint is applied here, so that the variety's cut and citrus line come through unaltered.
Drink young, within two or three years; serve at 10-12°C with oysters, a bowl of mussels or a fresh goat's cheese.
