Domaine Paul Pillot Bourgogne Blanc Aligoté 2023

Domaine Paul Pillot Bourgogne Aligoté is drawn from 1.5 hectares of estate-owned vines in Chassagne-Montrachet and the nearby Côte Chalonnaise.

Aligoté is Burgundy's other white grape, long treated as an afterthought and planted on the flatter ground left over once Chardonnay had taken the slopes, but a run of serious growers has shown what it can do when farmed properly. It keeps higher acidity than Chardonnay and gives a leaner, more citric wine. Pillot's holding is split between Chassagne and the Chalonnaise to the south. The grapes were crushed and pressed, then fermented spontaneously, and the wine aged on its lees, without stirring, in a combination of stainless-steel tank and older oak barrels. Leaving the lees undisturbed builds a little texture without softening the line of acidity, and the absence of new wood keeps the wine direct.

Best drunk over the next three or four years. Serve at 10-12°C with oysters, grilled sardines or a plate of gougères.
