Description
Clos Saint-Jean is the benchmark red terroir of Chassagne-Montrachet, and Paul Pillot holds the largest share of the original walled section.
The clos is the walled vineyard immediately beside the Pillot buildings in the village, and the historic heart of it, once called Chassagne du Clos Saint-Jean, covers only 2.2 hectares. The domaine's parcel sits in that core and runs to just over a hectare, split equally between Pinot Noir and Chardonnay. Being a short walk from the cellar, the vines get a great deal of hand work, including tressage, where the shoots are arched over by hand rather than hedged, which keeps the canopy intact and the ripening even. This wine fermented with whole bunches and was worked only by foot over around ten days, a gentle regime that draws perfume and fine tannin rather than sheer extract.
Give it two to three years and expect a decade of good drinking; serve at 16-18°C with roast lamb, game birds or a plate of charcuterie.
