Domaine Paul Pillot Saint-Aubin 1er Cru Les Charmois 2023

Domaine Paul Pillot Saint-Aubin 1er Cru Les Charmois comes from just over a hectare of 50-year-old vines on what is, in effect, the end of the Chassagne hillside.

Both of Pillot's Saint-Aubin vineyards lie on the east-facing slope bordering the Chassagne premier cru Chaumées, separated from the rest of Saint-Aubin by a small valley, with En Remilly on the far side. That makes this a distinct corner of the appellation, quite unlike the higher, cooler terroirs further west. Les Charmois sits above Pitangerets, and although there is plenty of limestone influence, the soils are a little deeper here. That extra depth, along with a more westerly exposure, tends to produce a riper, fruitier and more generous wine than the Pitangerets bottling. Domaine Paul Pillot, based at Chassagne-Montrachet and run by Thierry Pillot, raises the wine with just 10% new oak, which keeps the emphasis on the site.

Ready after two years and holding for eight or so. Serve at 10-12°C with grilled fish, roast chicken or a Gruyère and leek tart.
