Domaine Paul Pillot Santenay Vieilles Vignes 2023

Paul Pillot's old-vine Santenay comes from two small parcels on the Chassagne side of the village.

Santenay sits at the southern end of the Côte de Beaune, a village long associated with firm, dark-fruited Pinot Noir at sensible prices. The two parcels behind this cuvée, Les Champs Claudes and Les Parons-Dessus, lie close to the domaine's Bourgogne vines on the Chassagne side, where the limestone and clay soils give a rounder shape than Santenay's higher slopes. The vines are around 50 years old, and the fruit was fermented with roughly 20% whole bunches, which contributes spice and lift. Ageing takes place only in large-format neutral oak, so the emphasis stays on perfume and structure rather than barrel character. Thierry and Chrystelle Pillot make the wine at Chassagne-Montrachet, and the same clarity that marks their whites carries into the reds.

Drink over the next eight to ten years, with roast lamb, mushroom dishes or hard cheese, at 16 to 18°C.
