Domaine Pavelot Savigny-lès-Beaune 1er Cru 'Aux Guettes' arrives here in a half bottle, sized for one or two glasses.

Above the rooftops of Savigny a narrow slope faces due south on thin limestone; watchmen once kept lookout from it, which is where the vineyard name comes from. Pinot Noir planted almost four decades ago is picked by hand, destemmed and left to ferment on native yeasts before twelve months in barrel. Certified organic farming and gentle handling keep everything clear and unforced.

Aromatically this leans to red berries, rose petal and a flick of wood smoke, with tannins that are taut without being hard. Twenty minutes in the glass does it good; drink it cool, near 16 degrees, alongside grilled quail or a mushroom tart.
