Recipe

Pan-Seared Cod with Lemon Herb Butter Sauce

Ingredients:

  • 2 cod fillets (about 200g each)
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 garlic clove, minced
  • Juice of 1 lemon
  • Fresh dill, chopped (for garnish)

Instructions:

  1. Season the cod fillets with salt and pepper.
  2. Heat the olive oil in a non-stick skillet over medium-high heat. Sear the fillets for 2–3 minutes per side until golden and just cooked through.
  3. Reduce the heat to medium-low and add the butter and minced garlic, allowing the butter to melt and infuse the garlic.
  4. Squeeze in the lemon juice and spoon the herb butter sauce over the fish.
  5. Remove from heat, garnish with fresh dill, and serve immediately.
  6. Enjoy with a chilled glass of Domaine Pavelot Savigny-les-Beaune Blanc 2022 for a harmonious pairing that accentuates the wine's rich, complex profile.
