Pichot Vouvray Electron Libre is the domaine's low-intervention Chenin Blanc, bottled under cork with fourteen grams of residual sugar.
Vouvray's plateau east of Tours is clay and flint over tuffeau limestone, planted only to Chenin Blanc, and the local practice is to decide the style of each wine at harvest rather than in the cellar. Domaine Pichot farms the first coteau above the village bio-dynamically, ploughing the rows and working the vines by hand. Electron Libre is the estate's freest bottling, made with minimal handling and left with fourteen grams of residual sugar, which sits just off dry against the appellation's acidity. Sealed under cork rather than the screwcap used on the early-drinking wines, it is the cuvée most obviously intended for the cellar, and it opens slowly.
Off-dry, textured and built to keep; serve at 11 to 12 degrees with pork, poultry in cream or aged cheeses.
