Domaine Pichot Vouvray trie de grains nobles Les Larmes de Bacchus is a rare botrytised Chenin Blanc from one of only six vintages the estate has ever bottled.

The fruit comes from a single hectare of old, high-density Chenin Blanc on the premier coteau above the village of Vouvray, planted on clay and flint over tuffeau limestone. Botrytised berries are selected individually across seven or more pickings, and the vineyard gives one to two hectolitres per hectare in the years the wine is made at all. Fermentation ended with 150 grams per litre of residual sugar. Long, slow ageing in the cool tuffeau galleries beneath the slope has carried the wine well past the point where sweetness dominates, leaving Chenin Blanc's acidity and the noble rot character to do the work. Very little was ever produced.

Fully mature and more savoury than sweet by now, it suits blue cheese, aged hard cheeses or quiet contemplation; serve at around 10 to 12 degrees.
