Domaine Plageoles Gaillac Doux Le Loin de L'Oeil is a sweet white from a near-extinct local variety the domaine helped bring back.

Gaillac, on the Tarn north-east of Toulouse, is one of the oldest vineyards in France and holds a collection of indigenous varieties found almost nowhere else. Domaine Plageoles has spent decades resurrecting them, and Loin de l'Oeil is among the best known of its rescues. The name translates as far from the eye — the eye being the bud, and the distance referring to the long stems that hold the bunches well away from it. Farming is organic. Once the fruit reaches phenolic maturity, the team pinches the stem at the top of each bunch, which arrests ripening and concentrates both sugar and acidity. After harvest the grapes are whole-bunch pressed and the wine ferments naturally in old oak barrels made from the nearby Grésigne forest. Residual sugar sits at around 120 g/L, held in balance by extract and acidity. This is the 500ml format.

Drinking beautifully now and capable of a long life in bottle. Serve at 8-10°C with foie gras, apricot tart or a wedge of Roquefort.
