Domaine Ponsot Grand Cru Chapelle-Chambertin 2021

Ponsot's Chapelle-Chambertin comes from a single 0.47-hectare parcel in Gevrey-Chambertin that the domaine has bottled since 1970.

Chapelle-Chambertin lies on the lower side of the grand cru band at Gevrey, taking its name from a chapel that once stood in the vineyard. The Ponsot parcel sits in the Gémeaux lieu-dit, bordering Cherbaudes and En la Chapelle, which in turn adjoins En Griotte. The vines were replanted in 1990. Soils here are poor and notably rocky, with limited water-holding capacity, and they tend to give wines with a firm mineral spine and the structure to age at length rather than obvious early flesh. Vinification has shifted in recent years towards a longer time on skins with gentler extraction, which draws out aromatic detail and finer tannin without pushing the wine towards weight for its own sake. Production is small, as the parcel size suggests.

Give it five to fifteen years, and decant if opening young; serve at 16-18°C with roast lamb, venison or a well-aged epoisses.
