Domaine Ponsot Morey-Saint-Denis 1er Cru Clos des Monts Luisants Vieilles Vignes Blanc is the only premier cru in Burgundy made entirely from Aligoté.

The clos is a Ponsot monopole and for a long time was the only white premier cru in Morey-Saint-Denis. Its distinction runs deeper than that: since 2004 it has been planted solely to Aligoté, returning to the vineyard's origins after periods when small amounts of Chardonnay and Pinot Gouges, a white mutation of Pinot Noir, sat in the blend. The core of the wine comes from vines planted in 1911, and the Vieilles Vignes designation commemorates them; since 2015 a younger parcel has supplied about twenty per cent, bringing the average age down to roughly ninety years. The fruit is pressed pneumatically, fermented in a mixture of tank and barrel, then aged in neutral oak, every barrique between ten and sixty years old. Nothing about the handling flatters the variety, and few tasters identify it blind.

The magnum will hold and improve for fifteen years or more. Serve at 10-12°C with roast chicken, grilled fish or a plate of Burgundian cheeses.
