Domaine Ponsot Morey-Saint-Denis 1er Cru Clos des Monts Luisants Vieilles Vignes Blanc is the only Premier Cru in Burgundy made entirely from Aligoté.

The Clos des Monts Luisants is a Ponsot monopole and for a long time was the only white Premier Cru in Morey-Saint-Denis. Dujac now makes a white Monts Luisants, though not from within the Clos. What keeps this wine singular is the variety: at various points in its history the vineyard held small amounts of Chardonnay and Pinot Gouges, a white mutation of Pinot Noir, but from 2004 it returned to being entirely Aligoté, most of it from vines planted in 1911. Since 2015 a parcel of younger fruit has made up fifteen per cent of the blend, bringing the average vine age to around ninety years. The soils are grèzes litées over white oolite and Dijon-Corton limestone. The grapes were pneumatically pressed, fermented in tank and barrel, then aged in neutral oak between ten and sixty years old.

A long-lived white that repays a decade in the cellar. Serve at 10-12°C with roast chicken, poached fish or a mature hard cheese.
