Domaine Rossignol-Février Volnay Clos la Cave 2022

Domaine Rossignol-Février Volnay Clos la Cave is a red Burgundy from a named walled parcel in Volnay, the Côte de Beaune's byword for finesse.

In Burgundy a clos denotes a parcel enclosed by a wall, a habit of demarcation that goes back to the monastic holdings of the Middle Ages and often marks out ground someone thought worth fencing. Volnay is a small commune of shallow limestone soils on the slope above the plain, with close to thirty premiers crus and no grand cru, and a reputation for reds built on elegance rather than weight. The domaine carries one of the village's long established vigneron names. Fruit is hand harvested, fermented in the traditional manner and matured in oak barrel, with new wood used in moderation.

Serve at around 16 degrees with roast poultry, pork or mushroom dishes; a short decant helps, and the wine will hold for five to ten years.
