Saint Damien Clovis Saurel is the estate's top Gigondas, named for an earlier generation of the family that farms it.
Domaine Saint Damien has been in the Saurel family for several generations in the village of Gigondas, and this cuvee carries the name of a forebear. It is made only in small quantity from the oldest Grenache on the property, grown on limestone scree beneath the Dentelles de Montmirail where poor stony soil and altitude hold yields very low. Joel Saurel picks by hand in successive passes and ferments with indigenous yeast in concrete. Mourvedre completes the blend, contributing tannic spine and a savoury, meaty depth to the old vine Grenache. Elevage is long and takes place in old foudre and tank, since the estate uses no new oak on any of its wines.
The most structured wine of the range and one built for the cellar, it suits game, venison and mature hard cheese; serve at around 18 degrees.
