- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1 shallot, finely chopped

- 1/2 cup fish or light chicken stock
- Juice of 1 lemon
- Salt and pepper, to taste
- Fresh tarragon or parsley, for garnish
Instructions:
- Sear the Scallops: Heat the olive oil and 1 tablespoon of butter in a large non-stick skillet over medium-high heat. Season the scallops lightly with salt and pepper and sear for 1–2 minutes per side until they develop a golden crust. Remove and set aside.
