Roast Chicken with Creamy Mustard Sauce
Ingredients:
- 1 whole chicken (about 1.5kg), butterflied
- 2 tbsp olive oil
- Salt and pepper, to taste
- 4 garlic cloves, minced
- 1 tbsp fresh thyme leaves
- 1 cup chicken stock
- 1/2 cup crème fraîche
- 2 tbsp Dijon mustard
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 200°C. Rub the chicken with olive oil, salt, and pepper, then sprinkle with minced garlic and thyme.
- Place the chicken on a baking tray and roast for about 45–50 minutes until the skin is golden and the meat is cooked through.
- While the chicken is roasting, combine the chicken stock, crème fraîche, Dijon mustard, and lemon juice in a small saucepan. Bring to a simmer and let it reduce slightly to form a creamy sauce. Season with salt and pepper to taste.
- Once the chicken is done, let it rest for 5 minutes before carving.
- Drizzle the creamy mustard sauce over the carved chicken and garnish with fresh parsley.
