Domaine Theulot-Juillot Bourgogne Aligoté comes from a parcel on the plateau above Mercurey that until recently went into the domaine’s crémant.
Aligoté is Burgundy’s other white grape, historically planted on the flatter, cooler ground that Chardonnay did not claim, and it has been taken more seriously in the past decade than at any time since phylloxera. Nathalie and Jean-Claude Theulot farm at Mercurey in the Côte Chalonnaise, where the domaine is best known for its premier cru reds. This parcel, opposite the Mercurey cooperage, was bought relatively recently and its fruit was blended into the estate’s crémant until the couple were struck by the personality and energy of the wine it gave on its own and decided to bottle it separately. It has been a regular label ever since. Vinification is on lees in old oak barrels, which gives it a rounder shape than Aligoté usually shows.
Drink young, within two or three years. Serve at 10-12°C as an aperitif, or with fresh goat’s cheese, salmon or a plate of sashimi.
