Domaine Theulot-Juillot Mercurey 1er Cru La Cailloute is a monopole of 1.73 hectares, acquired by the family three generations ago.
Mercurey is the largest and most serious red-wine appellation of the Côte Chalonnaise, immediately south of the Côte de Beaune and working with the same Pinot Noir on limestone and clay. La Cailloute lies above Les Croichots and belongs entirely to Theulot Juillot, who make both red and white here, the white from a band of grey marlstone against the forest at the top of the vineyard. The red comes from two parcels on thick red clay over hard oolitic limestone: the first, planted in 1979, contributes finesse, while the second, planted a year later, supplies colour and structure. Nathalie and Jean-Claude Theulot work the vines without herbicide and age the wine in barrel, part of it new. It is the domaine's most complete red, and the one Nathalie Theulot calls her chouchou.
Approachable from two years and good for eight to ten. Serve at 16-18°C with roast duck, beef bourguignon or a mushroom tart.
