Description
Domaine Theulot-Juillot Les Combins is a Mercurey premier cru from a due south-facing slope rising directly out of the village.
Mercurey is the largest appellation of the Côte Chalonnaise, and Les Combins is one of its better-placed premiers crus, flanked by the two combes that give the village its shape. The domaine's vines sit at 275 metres on Oxfordian beige marl, grown from mass-selection cuttings planted between 1978 and 1988, with yields held below 40 hectolitres per hectare. Winemaking follows the pattern of the old-vine cuvée but with slightly longer skin contact, including a four-day cold soak intended to draw out fruit without pulling tannin. Ageing is also extended, at 14 months rather than 12, in Burgundian barrel. The result is a Mercurey with more depth and length than the village wines while keeping the appellation's freshness.
Best from two to three years and good for a decade. Serve at 16-18°C with roast lamb, duck confit or a mushroom pie.
