Domaine Theulot-Juillot Mercurey 1er Cru Les Combins 2021

Domaine Theulot-Juillot Mercurey 1er Cru Les Combins comes from due-south-facing vines at 275 metres, grown from the domaine's own massale cuttings.

Les Combins is among the better-placed premiers crus of Mercurey, rising from the village on a gentle slope flanked by the two combes that give the appellation its shape. The full southern exposure and the beige Oxfordian marl soils suit Pinot Noir well. Theulot Juillot planted the parcel between 1978 and 1988 using mass-selection cuttings from their own vines, and keep yields below 40 hectolitres per hectare. Winemaking follows the domaine's usual pattern but with a little more time on skins, including a four-day cold soak intended to draw out fruit rather than tannin. The wine spends fourteen months in barrel rather than twelve, with about a quarter new oak. It carries more flesh than the estate's village wines while keeping the firm tannin typical of good Mercurey.

Drink from two or three years and through the following decade. Serve at 16-18°C with roast lamb, coq au vin or aged Gruyère.
