Description
This is the second release from the Dancer family's agroforestry project at Nantoux, high in the Hautes Côtes above Pommard.
The Bourgogne Hautes Côtes de Beaune appellation covers the higher, cooler land behind the main Côte, where later ripening tends to give lighter, fresher wines. The Dancers have planted two hectares of Pinot Noir and Chardonnay at Nantoux, a village at around 400 metres known for its pink limestone quarries, and interspersed the vines with a range of local trees on a limestone plateau. The planting material is mass selection developed with the nurseryman Lilian Bérillon. In the cellar Théo Dancer destems all the fruit and extracts very gently, with a single soft punch-down each day simply to wet the cap, so the wine is built on bright red fruit and sappy freshness rather than structure. The site is young, and the wines from it are worth following as the vines mature.
Ready now and best drunk over the next five years. Serve lightly cool at 15-16°C with charcuterie, roast chicken or a mushroom tart.
