Truffle Wild Mushroom Risotto

Ingredients:

  • 400g Arborio rice
  • 300g mixed wild mushrooms (such as cremini, shiitake, and oyster), cleaned and sliced
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 litre vegetable broth, kept warm
  • 1/2 cup dry white wine (optional)
  • 2 tbsp olive oil
  • 1 tbsp vegan or unsalted butter
  • 1-2 tsp truffle oil (to taste)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Fresh thyme, for garnish

Instructions:

  1. In a large saucepan, heat the olive oil over medium heat. Sauté the chopped onion and garlic until soft and translucent, about 3 minutes.
  2. Add the sliced mushrooms and cook for 5–7 minutes until they release their moisture and begin to brown. Season lightly with salt and pepper.
  3. Stir in the Arborio rice and toast for 1–2 minutes so that each grain is well-coated with the oil and starts to turn translucent at the edges. If using white wine, add it now and stir until it is fully absorbed.
  4. Gradually add the warm vegetable broth, one ladle at a time, stirring continuously. Allow the rice to absorb the liquid before adding the next ladle. Continue this process for 18–20 minutes until the rice is creamy and al dente.
  5. Stir in the vegan (or unsalted) butter and truffle oil, adjusting the seasoning with salt and pepper.
  6. Remove from heat and garnish with fresh parsley and thyme. Serve immediately.
