Herbed Butternut Squash Risotto with Toasted Almonds
Ingredients:
- 400g Arborio rice
- 1 small butternut squash, peeled and diced into 1cm cubes
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 litre vegetable broth, kept warm
- 1/2 cup organic white wine (optional)
- 2 tbsp olive oil
- 1/3 cup toasted almonds, roughly chopped
- Salt and pepper, to taste
- Fresh sage or thyme, chopped (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large saucepan, heat the olive oil over medium heat. Sauté the chopped onion and garlic until translucent, about 3 minutes.
- Add the diced butternut squash and cook for an additional 5 minutes until it begins to soften.
- Stir in the Arborio rice and toast for 1–2 minutes until the grains are well-coated. If using white wine, pour it in now and allow it to absorb completely.
- Begin adding the warm vegetable broth one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next, and continue this process for 18–20 minutes until the rice is creamy and al dente and the squash is tender.
- Fold in the toasted almonds and adjust seasoning with salt and pepper.
- Remove from heat, garnish with fresh sage (or thyme) and parsley, and serve immediately.
