Herbed Butternut Squash Risotto with Toasted Almonds
Ingredients:
- 400g Arborio rice
- 1 small butternut squash, peeled and diced into 1cm cubes
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 litre vegetable broth, kept warm
- 1/2 cup organic white wine (optional)
- 2 tbsp olive oil
- 1/3 cup toasted almonds, roughly chopped
- Salt and pepper, to taste
- Fresh sage or thyme, chopped (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large saucepan, heat the olive oil over medium heat. Sauté the chopped onion and garlic until translucent, about 3 minutes.
- Add the diced butternut squash and cook for an additional 5 minutes until it begins to soften.
- Stir in the Arborio rice and toast for 1–2 minutes until the grains are well-coated. If using white wine, add it now and let it absorb completely.
- Gradually add the warm vegetable broth one ladle at a time, stirring continuously. Allow each addition to be absorbed before adding the next, and continue for 18–20 minutes until the rice is creamy and al dente and the squash is tender.
- Fold in the toasted almonds and adjust seasoning with salt and pepper.
- Remove from heat and garnish with fresh sage (or thyme) and parsley. Serve immediately.
