Domaine William Fèvre Chablis Grand Cru Bougros "Côte de Bouguerots" Domaine comes from the steepest corner of the Chablis grand cru hill, right above the river.
Bougros is the westernmost of the seven grand cru climats, and Côte Bouguerots is the lower, dramatically steep section of it that drops towards the Serein. The slope is severe enough to need terracing, the soil is thin over Kimmeridgian limestone, and the aspect catches the sun early, which sets it apart from the gentler upper part of Bougros. Fèvre owns the greater share of this parcel. The domaine was founded in 1959 by William Fèvre, whose family had long farmed vines here, and was bought in 1998 by the Henriot family, who installed Didier Séguier as winemaker. He replaced heavy new oak with larger, older barrels. The word Domaine on the label marks wine from the estate's own vineyards.
Serve at about 12 degrees with lobster, scallops or roast poultry; this will develop over a decade and more in the cellar.
