Domaine William Fèvre Chablis Grand Cru Bougros Domaine 2023

Domaine William Fèvre Chablis Grand Cru Bougros Domaine comes from the western end of the single hillside that carries all seven Chablis grands crus.

Bougros sits at the far end of the grand cru slope, next to Preuses, on ground that is gentler and a little deeper than the steep climats at its heart. Like the rest of the hill it faces south-west across the Serein and rests on Kimmeridgian marl laid down under a Jurassic sea. The domaine was founded in 1959 by William Fèvre, whose family had long farmed vines here, and was bought in 1998 by the Henriot family, who installed Didier Séguier as winemaker. Under him the house moved away from the assertive new oak of earlier years, so the vineyard rather than the cellar sets the tone. The Domaine label denotes estate-grown vines.

Serve at about 12 degrees with scallops, roast chicken or richer fish dishes; it will reward a decade in the cellar.
